In a rapidly changing world nothing is as comforting as a nice home cooked meal. During a time when going out to eat is more difficult, we all are eating more at home again. But during the week days most people do not have the time or energy to cook a home cooked meal. We are hoping by providing some easy and quick recipes to inspire people to walk past the Microwave meals in the grocery store and grab some fresh produce and meats and cook a quick and healthy meal.
We feel that a recipe is just a starting point not a end point. Its great to follow a recipe to the letter the first time you use it, but afterwards adapt it to your own taste. A lot of recipes out there are geared toward the general taste, but not to your own specific taste. So next time maybe use some more of the herb or spice which the recipe recommends. Another way to quickly change a dish is to for example substitute a spice, herb or even a vegetable. A small change like that can refresh a "old" recipe to something completely unique.
A lot of people are afraid to fail or are intimidated by a recipe. The sooner one accepts that on occasions a meal will not be perfect the better. Cooking especially in the beginning is trail and error. Rome wasn't build in day, neither is the "perfect" dish. Learn from your "mistakes" and sometimes a 'mistake" leads to an amazing dish. To paraphrase the great Bob Ross, they are happy little accidents.
In a ideal world one would only use fresh produce and make everything from scratch. But we all know that is impossible for majority of the people due to time constrains. Like the famous Chef Jacques Pepin says in his program "more fast food my way", its OK to use a shortcut once in a while. A prime example is for example the use canned beans, dried pasta or a frozen vegetable. Just look at the labels and get one with low sodium etc. so that you can flavor it your way.
